Wink
Day 2: 5-Course Farm-Driven Opulence Tasting Series
Opened way back in 2001, Wink on North Lamar is one of the city’s premier farm-to-table restaurants. But, while it is an Austin 360 Hall of Fame member, it is certainly not resting on its laurels. Indeed, it appears on this year’s Infatuation List of “Best Tasting Menus in Austin” and has clocked in at #10 on Austin American Statesman restaurant critic Matthew Odam's List of "Top 25 Restaurants.” Chef Mark Paul, an Austin native, has worked in many renowned restaurants, including Le Cirque (New York), and Charlie Trotter's (Chicago). After coming back home in 1995, he worked at Brio and Brio Vista before establishing Wink. A member of Slow Foods International and The James Beard Foundation, he is a vocal advocate for small local farms and sustainable agriculture, all reflected in his Wink menu. Here, diners find dishes like stripped bass on quinoa with sweet peas, arugula and black currant balsamic; duck breast with hedgehog mushroom, turnips, greens, and port demi; and desserts like lemon meringue pot and crème brûlée. We can’t wait to visit Wink and to hear Chef Paul’s secrets to keeping a restaurant so fresh and alive!
