Day 1: 5-Course Oceanic Extravaganza Tasting Series
Opened at the end of 2023, this Ballard eatery has appeared on Thrillist’s list of “16 Food Experiences That Define Seattle” (2024) and Eater’s 2025 list of “Best Seafood in Seattle.” Chef/Owner Josh Delgado has had an interesting journey, starting his cooking career in Southern Arizona at 16, then working in the summers for the Forest Service, providing meals for forest fire fight crews. In 2007, he landed in Seattle, where he served as Chef de Cuisine at the Barking Frog, as Executive Chef at Alderbrook on the Hood Canal, and finally opened his own restaurant, Le Coin, in Upper Fremont in 2018. At The Garrison, he focuses on tidal and coastal cuisine, with sustainably sourced meats, seafood, and shellfish, as well as farm fresh vegetables. From crispy wild prawns to cioppino to seared sablefish, plenty of oysters, wagyu steak for landlubbers, and maybe finishing up with some black pepper cream, there is something here for all tastes. “A sensory escapade” is how Seattle Refined describes The Garrison, so naturally we are primed for our visit. An Arizona native, Chef Delgado began his culinary career at 16, working to provide meals for US Forestry firefighters and relief workers during natural disasters. After making his way to the PNW, he honed his craft as Chef de Cuisine at Woodinville institution The Barking Frog, as well as Executive Chef at the Alderbrook Resort and Spa and Chef/Partner at Le Coin.

- Yes. All attendees must be 21+ to gain entry.
- Does this restaurant allow BYOB?
- No. This restaurant is a non-BYO establishment. Outside alcohol will not be permitted at this event.
- What is the event ticket cancellation/refund policy?
- Restaurants purchase the food for our events 14 days before the event date, at which point we are on the hook for the cost of your ticket. As such, we are not able to offer refunds (or credits towards future events) for any cancellation requests submitted within 14 days of the event date. We will, however, issue full refunds for all cancellation requests submitted at least 14 days before the event date. All cancellation requests must be submitted via email to support@tastingcollective.com.
