Safta

6-Course Contemporary Israeli Dinner Event

Opened a year ago August, Safta, in the new Source Hotel, is the brainchild of James Beard Award-winning chef Alon Shaya, whose mission is to bring the splendors of Israeli food to Denver. The restaurant’s name, Hebrew for “grandmother,” connotes warmth and hospitality. Here, you can expect to find dishes that show influences from Yemen, Syria, Morocco, Turkey, Romania, and Bulgaria, including lutenitsa, a red pepper, eggplant, and tomato spread, multiple kinds of hummus, and fabulous crispy eggplant topped with goat cheese and watercress. Did we mention that the pita bread uses a century-old sourdough starter from San Francisco and is baked in a wood-burning oven? “The pita really is that good,” raves 5280, and the Denver Post promptly named Safta to its list of “The 9 Hottest Denver Restaurants of 2018,” adding that “it might be the best restaurant to have opened in Denver all year.” Chef Shaya will be away when we take over the restaurant for this event, but Chef de Cuisine Josh Gordon will be on hand to answer your questions and walk you through the fascinating landscape of Israeli cuisine.
