Day 1: 5-Course Memories of Mexico Tasting Series
Opened in 2023, this astonishing Mexican eatery was named Star Tribune’s “Restaurant of the Year,” became a 2024 James Beard Finalist for “Best New Restaurant,” and landed on Bon Appétit’s List of “20 Best New Restaurants” of 2024. Chef/Owner Gustavo Romero grew up in Tulancingo, Hidalgo MX, where the seeds for his heirloom corn evangelism were planted. Now, he thrills diners with a full service masa kitchen dedicated to promoting corn from overlooked side dish to star of the show. Representative dishes here include tacos with beef tongue, shrimp, or pork confit, quesadillas de huitlacoche, fabulous moles, pozole, ceviches, and so much more. “Oro de Nixta has set the gold standard for Mexican cooking in Minneapolis,” raves Star Tribune, while Minnesota Monthly says that Chef Romero is “cooking the most exciting, most interesting, most unique food in town.” Naturally, we’re over the top excited to visit here and to chat with Chef Romero and his partner, fellow chef, and wife Kate. It promises to be quite an evening!

Chef Gustavo Romero's story is rooted in Tulancingo, Hidalgo, Mexico, where the seeds for his heirloom corn evangelism were planted. After culinary stops in Miami, Atlanta, SF, Florence, and Oakland, he moved to Minneapolis, where after COVID crashed the restaurant industry, he pivoted to making superfood corn tortillas using heirloom corn and traditional nixtamalization techniques. He and his chef/wife now operate Nixta Tortilleria, and James Beard Nominated Oro by Nixta.

- Do guests need to be of a certain age to attend this event?
- Yes. All attendees must be 21+ to gain entry.
- Does this restaurant allow BYOB?
- No. This restaurant is a non-BYO establishment. Outside alcohol will not be permitted at this event.

- What is the event ticket cancellation/refund policy?
- Restaurants purchase the food for our events 14 days before the event date, at which point we are on the hook for the cost of your ticket. As such, we are not able to offer refunds (or credits towards future events) for any cancellation requests submitted within 14 days of the event date. We will, however, issue full refunds for all cancellation requests submitted at least 14 days before the event date. All cancellation requests must be submitted via email to support@tastingcollective.com.
- What dietary restrictions/food allergies can be accommodated at this event?
- Due to the large-format nature of our events, restaurants are not able to accommodate all dietary restrictions/food allergies or make any menu adjustments based on food preferences (e.g distaste for specific ingredients/flavor profiles). This menu will be Gluten. Butter & Mushroom Free and the restaurant will be offering substitutions exclusively for the following restrictions/allergies: Vegetarian, Pescatarian, Shellfish, Fish, Milk/Cream with the Exception of Cheese, Allium with the Exception of Onion (Raw & Cooked) and Garlic (Raw & Cooked) . They are NOT accommodating restrictions related to the following ingredients: Cow's Milk Cheese, Sheep's Milk Cheese, Goat's Milk Cheese, Egg, Tree Nuts, Coconut, Peanut, Onion (Raw & Cooked), Garlic (Raw & Cooked).
