5-Course Ode to Bel Paese Tasting Event
Opened in 2023, this East End eatery has appeared on Eater’s List of “Best Italian Restaurants in Houston” and Infatuation’s “Best Italian in Houston” List. Occupying the building within historical Tlaquepaque Market Square that once housed the much-loved Konomwan Thai restaurant, MIMO is the creation of Chef Fernando Rios, who was born in Mexico City, raised in Houston’s Greater East End, and has spent over 20 years honing his craft in some of the city’s most acclaimed kitchens, most recently as Executive Chef at Weights & Measures. His MIMO menu is delighting diners with dishes like potato and prosciutto crochette, gnocchi alla marinara, tubetti with beef ragù and rapini, lamb chops “scottadito” with charred heirloom tomatoes, house labneh, and mint, and classic desserts like panna cotta, zeppole, and tiramisu. “MIMO feels like a gem you stumbled upon while on vacation,” says Texas Monthly, while Houstonia says, “Among the surge of flashy new Italian restaurants to have hit Houston recently, MIMO is excellent in its simplicity.” We are very much looking forward to our visit here and to chatting with Chef Rios about his food ideas. Fernando Rios
Co-Chef/Owner
Born in Mexico City and raised in Houston’s Greater East End, Chef Fernando Rios has spent over 20 years honing his craft in some of the city’s most acclaimed kitchens, from Da Marco, to Dolce Vita, to Weights & Measures. In March 2023, he brought his passion for authentic Italian cuisine to life with the opening of MIMO.
Mike Sammons
Co-Owner
Mike Sammons is a native Houstonian and a seasoned professional in the culinary industry, boasting over 25 years of experience. As a Level Two Sommelier, he has a refined palate and a passion for excellent food and wine pairings, but he is also known for being a founding partner in numerous successful bars and restaurants across Houston, showcasing his commitment to the local dining scene. In 2022, he teamed up with Chef Fernando Rios to open MIMO, an Italian restaurant that reflects their shared vision and culinary expertise.
