Day 1: 5-Course Palate-Bending Pleasures Tasting Series
Opened in September of 2023, this Adair Park eatery (hosted at Vine Club) appeared on Atlanta Magazine’s 2024 List of “4 Supper Clubs to Know About” and is on Eater’s 2025 List of “Best New Restaurants in Atlanta.” Maria is the creation of Chef/Owner Trevor Shankman, who named it for his beloved grandmother. Here, he serves a “secret,” multi-course, conceptual tasting menu to a small cohort of guests multiple times a month. Did we mention that Chef Shankman, at just 23 years old, is a wunderkind? Entirely self-taught, he creates utterly surprising and quite brilliant dishes like farro, buckwheat, and corn paired with cherry fluid gel, brown butter-roasted maitake mushrooms, and mushroom puree with savory pound cake. Or perhaps poularde, incredibly moist sous-vide chicken with cauliflower, grapes, and Madagascar vanilla. Or coffee-rubbed steak with confit potatoes and crispy plantains, an homage to his grandmother’s Cuban background. And, if we’re lucky, his coconut flan will be on the menu. This is going to be a particularly special event, as we sample Chef Shankman’s fare and hear his surprising and, yes, genius ideas about food.

Chef Trevor Shankman opened Maria in honor of his late grandmother, who passed after losing a 2+ year battle with stage 4 colon cancer. He was previously a staple of his father’s pop-up restaurant Speak Easy Supper Club.

- Do guests need to be of a certain age to attend this event?
- Yes. All attendees must be 21+ to gain entry.
- Does this restaurant allow BYOB?
- No. This restaurant is a non-BYO establishment. Outside alcohol will not be permitted at this event.
- What is the event ticket cancellation/refund policy?
- Restaurants purchase the food for our events 14 days before the event date, at which point we are on the hook for the cost of your ticket. As such, we are not able to offer refunds (or credits towards future events) for any cancellation requests submitted within 14 days of the event date. We will, however, issue full refunds for all cancellation requests submitted at least 14 days before the event date. All cancellation requests must be submitted via email to support@tastingcollective.com.
- What dietary restrictions/food allergies can be accommodated at this event?
- Due to the large-format nature of our events, restaurants are not able to accommodate all dietary restrictions/food allergies or make any menu adjustments based on food preferences (e.g distaste for specific ingredients/flavor profiles). This restaurant will be offering substitutions exclusively for the following restrictions/allergies: Vegetarian, Pescatarian, Fish, Mushroom, Shellfish, Some Alliums (with the exception of Chive and Garlic). They are NOT accommodating restrictions related to the following ingredients: Chive, Garlic (cooked), Butter, Milk/Cream.
