5-Course Inventive Mexican Tasting Event
Pair the traditions, flavors, and techniques of Mexico with the best locally sourced products from the Mid-Atlantic region and you get Maïz64, whose name references the 64 varies of maiz, the Spanish word for corn. Maïz64 came to Logan Circle in the fall of 2021, helmed by Executive Chef Alam Méndez Florián, a native of Oaxaca, the Mexican city that has given rise to one of the world’s great cuisines. After studying at the Instituto Culinario de México in Puebla, Chef Florián held internships at two Michelin-starred restaurants in Spain, Can Fabes and Arzak. He then became sous chef at the Hotel Santa Cruz Plaza in Chile and was the main chef at Don Porfirio restaurant in Guatemala. In 2016, he became chef and partner at Pasillo de Humo in Mexico City, widely regarded as one of that nation’s finest. At Maïz64, Chef Florián is turning out refined and exquisite dishes like a charred broccoli taco with black mole and cashews, esquites (street corn salad) with heirloom Mexican corn, and lobster with mussel tamales atop a lobster-epazote bisque. Eater calls Maïz64 “the most exciting fancy Mexican restaurant D.C. has seen in years,” and we can’t wait to visit!

Executive Chef
Hailing from Mexico and a graduate of the Instituto Culinario de México in Puebla, Chef Alam Méndez has cooked at Intro restaurant under chef Angel Vazquez, at Michelin starred restaurants such as Can Fabes and Arzak, as sous chef at the Hotel Santa Cruz Plaza in Chile, as the main chef at Don Porfirio restaurant in Guatemala, and opened Pasillo de Humo in Mexico. In addition to his experience at these restaurants, he was semi-finalist in San Pellegrino Young Chef Central America & Caribbean and won the third edition of the Joven Promesa Gastronómica Ribera del Duero contest in Mexico City.

- Do I have to bring printed tickets to the event?
- No tickets are needed.
- What does the ticket price cover?
- The ticket price covers the full cost of the meal.
- Do guests need to be of a certain age to attend this event?
- Yes. All attendees must be 21+ to gain entry.
- What must I bring to the event?
- Please make sure to bring a government-issued photo ID.
- What is the event ticket cancellation/refund policy?
- Restaurants purchase the food for our events 14 days before the event date, at which point we are on the hook for the cost of your ticket. As such, we are not able to offer refunds (or credits towards future events) for any cancellation requests submitted within 14 days of the event date. We will, however, issue full refunds for all cancellation requests submitted at least 14 days before the event date. All cancellation requests must be submitted via email to support@tastingcollective.com.
- What dietary restrictions/food allergies can be accommodated at this event?
- At this event the chef will provide substitutions for critical food allergies/dietary restrictions but will not make menu adjustments based on food preferences (e.g distaste for specific ingredients/flavor profiles). If you have restrictions/allergies, please make sure to Update Your Dietary Restrictions within your Account Info before or after you purchase tickets, or email us at support@tastingcollective.com after you purchase tickets to let us know.
- What COVID safety precautions will be taken at this event?
- At this event, we will be accommodating all requests for separate tables rather than communal seating. Additionally, all food will be served individually-plated rather than family-style. As per local guidelines, as well as the restaurant’s own policy, attendees will not be required to present proof of vaccination for entry.
- Can I bring guests/non-members to this event?
- Yep! For this event, guest tickets are $85 + tax & tip, and you can bring up to 3 guests. Please note, guests are not allowed to attend unaccompanied by a member.
