Lost Coyote
5-Course Avant-American Tasting Event
Opened this past February in the historic Tremé section of New Orleans, this unusual eatery (inspired by the coyote’s untamed spirit) takes diners to unexpected and exciting places. Executive Chef Nicole Theriot Lauten is an alum of the esteemed Bywater American Bistro, founded by Nina Compton (a James Beard Award winner for “Best Chef: South”). Here, she's offering up a menu that includes such signature dishes as shrimp boulettes with chamoy aioli, sweet tea brined pork belly with bourbon BBQ, Parmesan-crusted pork chop with smothered greens and apple cider jus, chicken cassoulet, beef pot pie, and more. It’s comfort food notched up several levels, and we are excited to visit here and to chat with Chef Lauten about her food ideas.
