Day 1: 5-Course Opulent Omakase Tasting Series
Reopening this month after its 2024 closure, Chicago’s original and largest dry-aged seafood sushi restaurant appeared this May on Infatuation’s List of “Best in Logan Square” and its June “Hit List” of new restaurants to try right now. Jinsei Motto, which means “more life,” is the Japanese restaurant you’ve been dreaming of. Here, diners discover appetizers like crispy tuna and crab bites, wood-fired edamames, and an outstanding version of the classic chicken karaage. Then come the exceptional sashimi and nigiri, including out-of-this-world uni. From the wood-fired oven come broccolini, mushrooms, and sablefish, and then there are napa cabbage, chicken thigh, and lamb chop robatas. The meal is rounded off with a matcha affogato with burnt honey gelato or a sake, lemongrass, and lime leaf tiramisu. And it’s all served up in a stunning setting with an industrial design vibe. Wow. Chef Patrick Bouaphanh first met Co-Chef and business partner Andrew Choi at Sushi Dokku in 2015. After honing his craft at Union Sushi + Barbecue Bar and Sushi-san, they began the first incarnation of Jinsei Motto, where he works closely with co-hosting Exec Chef Eric Blanck.
Eric Blanck
Executive Chef
Chef Eric Blanck began his culinary career working as a dishwasher and prep cook at a pizza restaurant in his hometown. A Le Cordon Bleu graduate with 21 years of experience running the restaurant, he now serves as Exec Chef at Jinsei Motto.

Requests submitted after this date will not be accommodated. Additionally, Jinsei Motto will only be accommodating certain dietary restrictions/food allergies, and they are unable to make menu adjustments based on distaste for specific ingredients/flavor profiles.

- Peanuts: This menu is peanut-free.
- Tree Nuts: There is Coconut in Course 5. Substitutions will be provided.
- Alliums: There is Onion (Raw), Shallot (Raw), The Raw Onion is a Tropea Onion and So I Checked Off Shallot Too in Course 1, Scallion (Cooked), Chive and Onion (Cooked) in Course 2 and Shallot (Raw) and Garlic (Cooked) in Course 4. Substitutions will be provided.
- Mushrooms: This menu is mushroom-free.
- Soy: There is Soy Sauce (Gluten Free) in Course 1, Soy Sauce (Gluten Free) and Soy Sauce (with Gluten) in Course 2, Miso in Course 3 and Soy Sauce (with Gluten) in Course 4. Substitutions will be provided.
