Gravitas

5-Course Ode to the Chesapeake Tasting Event

Opened in 2018, this Ivy City Michelin-Starred eatery has certainly kept things fresh, being named to this year’s Washingtonian List of DC’s “100 Very Best Restaurants.” Gravitas is the creation of Chef Matt Baker, who got his start in Singapore working as Executive Chef at Krish. Named by Time as “the country’s hottest chef” and by Zagat in 2015 to its “Top 30 Under 30” List, he also honed his craft under Chef Jose Andres at 2-Michelin-Starred Minibar. At Gravitas, he is offering an inventive menu that features dishes such as warm mushroom velouté with lobster salad, english pea agnolotti, wagyu beef dumplings, sourdough-crusted lamb loin, and stunning desserts like white chocolate cake with lime gel and strawberry sorbet and “butterfinger” with peanut butter nougat, salted caramel ice cream, and chocolate crémeux. And it’s all served up in a stunning space that was formerly a tomato packing factory. “Gorgeous…transforms local products into modern, deeply complex items” is how Michelin describes the Gravitas experience, which we very much look forward to having. Chef/Owner

A graduate of Johnson & Wales University, Chef Matt Baker took his first Executive Chef position at Krish in Singapore, where he was named "The Country's Hottest Chef" by Time Magazine. One of Zagat's 2015 "30 Under 30", he honed his skills at 2-Michelin-Starred Minibar, Brasserie Beck, Occidental Grill & Seafood, and City Perch in Bethesda before opening Gravitas in February 2018.

  2. Heirloom Tomato Salad

    shiso, radish, sesame-hazelnut croquant, baby spinach, yuzu-kosho aioli, ponzu vinaigrette

  3. Summer Agnolotti

    summer corn, english pea, sugar snap pea, chanterelle mushroom, pecorino, arugula

  4. Braised “Barbacoa” Beef Cheek

    corn purée, radish & pickled onion, cilantro rice, micro cilantro, spiced jus

  5. Butterfinger, Gravitas Style

    salted caramel, peanut butter nougat, chocolate crémeux, salted caramel ice cream, candied peanut

Event FAQs


Do guests need to be of a certain age to attend this event?
Yes. All attendees must be 21+ to gain entry.
Does this restaurant allow BYOB?
No. This restaurant is a non-BYO establishment. Outside alcohol will not be permitted at this event.
What is the event ticket cancellation/refund policy?
Restaurants purchase the food for our events 14 days before the event date, at which point we are on the hook for the cost of your ticket. As such, we are not able to offer refunds (or credits towards future events) for any cancellation requests submitted within 14 days of the event date. We will, however, issue full refunds for all cancellation requests submitted at least 14 days before the event date. All cancellation requests must be submitted via email to support@tastingcollective.com.
What dietary restrictions/food allergies can be accommodated at this event?
Due to the large-format nature of our events, restaurants are not able to accommodate all dietary restrictions/food allergies or make any menu adjustments based on food preferences (e.g distaste for specific ingredients/flavor profiles). This restaurant will be offering substitutions exclusively for the following restrictions/allergies: Vegetarian, Pescatarian, Allium, Dairy, Gluten, Fish, Mushroom, Nut.
