5-Course Ode to the Old-World Tasting Event

Opened at the end of 2023, this acclaimed eatery has appeared on both Eater’s and Infatuation’s List of “Best Downtown Austin Restaurants” as well as Infatuation’s List of “Best New Restaurants of 2024.” Here, Paris meets Rome in the inspired hands of Executive Chef Jason Tallent, who studied at the California Culinary Academy and spent more than a decade in the Bay Area working with multiple James Beard Award-Winning chefs. In Austin, he held Executive Chef roles at several acclaimed Austin restaurants, most recently Cipollina and also serves as Executive Chef at Gràcia. Here, his menu includes such dishes as Chioggia beet carpaccio with smoked ricotta, mint, pistachio, and cinnamon vinaigrette, bucatini with brisket Bolognese, chicken madeira, panzanella salad, rabbit rillettes, crab croquettes, and superlative versions of tiramisu and affogato. And it’s all served up in an 1800’s site that has served as a jail, brothel, office, and saloon, with original brick walls and a large wooden bar that has seen a lot of history. Executive Chef

Texas-born Chef Jason Tallent studied at the California Culinary Academy and cultivated his early career in San Francisco. After working with multiple James Beard award-winning chefs in the Bay Area, he returned to Texas, where he's served as Executive Chef at acclaimed Austin restaurants such as Cipollina and Gràcia.

Do guests need to be of a certain age to attend this event?
Yes. All attendees must be 21+ to gain entry.
Does this restaurant allow BYOB?
No. This restaurant is a non-BYO establishment. Outside alcohol will not be permitted at this event.

What is the event ticket cancellation/refund policy?
Restaurants purchase the food for our events 14 days before the event date, at which point we are on the hook for the cost of your ticket. As such, we are not able to offer refunds (or credits towards future events) for any cancellation requests submitted within 14 days of the event date. We will, however, issue full refunds for all cancellation requests submitted at least 14 days before the event date. All cancellation requests must be submitted via email to support@tastingcollective.com.
What dietary restrictions/food allergies can be accommodated at this event?
Due to the large-format nature of our events, restaurants are not able to accommodate all dietary restrictions/food allergies or make any menu adjustments based on food preferences (e.g distaste for specific ingredients/flavor profiles). This restaurant will be offering substitutions exclusively for the following restrictions/allergies: Vegetarian, Pescatarian, Dairy, Gluten, Fish, Nut. They are NOT accommodating restrictions related to the following ingredients: Chive, Garlic (cooked), Leek, Onion (cooked), Scallion, Shallot.
