Fork
DAY 2: 5-Course Hyper-Seasonal Tasting Series
In the tumultuous restaurant world, a run of 25+ years is something to crow about. Fork, which opened in 1998 - and is part of 2023 James Beard "Outstanding Restaurateur" Award-Winning Ellen Yin's culinary empire - is a keeper then. A true pioneer in the farm-to-table movement, Fork has emphasized sustainability and local sourcing since opening Chef John Patterson's day. He helped Fork achieve Four Bells from Philadelphia Inquirer critic Craig Laban at that time. Fast forward 25 years, during which Esquire named Fork to its 2021 List of “100 Restaurants America Can’t Afford to Lose”, and Infatuation named it its 2025 "15 Best in Old City" List, and not much has changed in terms of Fork's incredible culinary presence. That said, with a refreshed look and a new chef at the helm in Chef Sam Henzy (formerly of 3-Michelin-Starred Noma, 3-Michelin-Starred Quince and Michelin-Starred Angler in SF, as well as renowned Vernick Food & Drink), Fork might well feel "reborn" to you – if no less iconic!
About the Host:
George Madosky
Chef de Cuisine
Hailing from New Jersey and a graduate of Johnson & Wales University, Chef Madosky has worked his way up the ranks at Fork. In his 5 years there, he has graduated from Garde Manger Cook to Sous Chef and eventually to Chef de Cuisine in May 2020, helping Fork achieve Four Bells from Philadelphia Inquirer critic Craig Laban along the way. Now at the helm, Chef Madosky has rebuilt Fork and the kitchen team after the pandemic pause, all the while bringing a fresh perspective to a restaurant that the community relies on.
