Day 1: 5-Course Ode to the Arabian Peninsula Tasting Series
Opened in late 2023, this Capitol Hill eatery that draws inspiration from the stylish cafés of the Arabic world has appeared on such Best Of Lists as Seattle Times’ “15 Great Restaurants” (2024) and Eater’s “38 Essential Seattle Restaurants” (2025). Chef/Owner Ahmed “Suli” Suliman was born in Sudan and grew up in Abu Dhabi, where he learned to cook from his late mother “Afaf.” Here at his own spot, tucked inside a corner of Melrose Market, he is delighting diners with dips like hummus, braised lamb, mint, and almonds and labneh, salsa verde, pine nuts and chili oil; mains like halloumi, fennel, leeks, date syrup, and quince vinegar and black cod, tahini-yogurt, sorrel, and fenugreek brown butter; and desserts like olive oil cake with rhubarb and tangerine oil and dates with sea salt, pistachio, and bergamot oil. “There are few better places in Seattle to pass time,” says Eater, so, indeed, let us spend time here hearing from Chef Suliman about the culinary culture he is capturing for the Emerald City!

Chef Ahmed "Suli" Suliman, a Sudanese national who grew up in Abu Dhabi, spent the first half of his life immersed in the city's cosmopolitan melting pot. After immigrating to the US, he honed his craft across top Seattle restaurants such as Sitka & Spruce, Homer, and The Corson Building. Cafe Suliman is his first restaurant.
The Lineup

- What is the event ticket cancellation/refund policy?
- Restaurants purchase the food for our events 14 days before the event date, at which point we are on the hook for the cost of your ticket. As such, we are not able to offer refunds (or credits towards future events) for any cancellation requests submitted within 14 days of the event date. We will, however, issue full refunds for all cancellation requests submitted at least 14 days before the event date. All cancellation requests must be submitted via email to support@tastingcollective.com.
