5-Course Butcher's Bounty Tasting Event

Opened in 2014, this Boulder institution was awarded the coveted Michelin Green Star Award for Sustainable Gastronomy in 2023 and 2024, appeared on Vogue’s “Where to Eat in Boulder” List and Eater’s “38 Essentials” List,” and its chef, Hosea Rosenberg, is both a Top Chef Season 5 Winner and a 2025 James Beard Semi-Finalist for “Best Chef: Mountain.” So, it's safe to say that they've made a name for themselves! Whole-animal butchery and charcuterie are a focus of Blackbelly’s menu, with Chef Rosenberg working closely with local farmers and ranchers. Provided with the best fruits of their labor, Blackbelly’s menu features such signature dishes as crispy pigs ears with red pepper jelly and sunny side egg, scallop crudo with tomato peach consommé, and grilled confit mushrooms. Leave room too for their luscious desserts like tropical s’mores with banana mousse and passion fruit marshmallow and carrot cake with cream cheese mousse, orange caramel, and fried walnuts. “A pleasure,” is how 5280 describes Blackbelly, while Westword hails it as “ another Boulder gem dedicated to doing food the old-fashioned way". Needless to say, we’re on our way, and hope to see you there!

Hosea Rosenberg

Chef/Owner

Hailing from Taos, NM, Chef Hosea Rosenberg's journey began while earning a degree in Engineering Physics at the University of Colorado. After realizing cooking was his true passion, he honed his craft under established chefs like Wolfgang Puck, Kevin Taylor, and Dave Query and at top spots like Dandelion and Jax Fish House. A Bravo TV's Top Chef winner, he launched Blackbelly in 2011. In 2025, he was named a James Beard “Best Chef: Mountain” Semi-Finalist.

Do guests need to be of a certain age to attend this event?
Yes. All attendees must be 21+ to gain entry.
Does this restaurant allow BYOB?
No. This restaurant is a non-BYO establishment. Outside alcohol will not be permitted at this event.

What is the event ticket cancellation/refund policy?
Restaurants purchase the food for our events 14 days before the event date, at which point we are on the hook for the cost of your ticket. As such, we are not able to offer refunds (or credits towards future events) for any cancellation requests submitted within 14 days of the event date. We will, however, issue full refunds for all cancellation requests submitted at least 14 days before the event date. All cancellation requests must be submitted via email to support@tastingcollective.com.
What dietary restrictions/food allergies can be accommodated at this event?
Due to the large-format nature of our events, restaurants are not able to accommodate all dietary restrictions/food allergies or make any menu adjustments based on food preferences (e.g distaste for specific ingredients/flavor profiles).
