Day 1: 5-Course Modern French Elegance Tasting Series
Opened just this past August, 2025, in St. Johns, Bar Nouveau started life as a pop-up before converting to a brick-and-mortar (and swiftly landing on Portland Monthly’s “Most Anticipated Restaurants” List for it). Chef/Owner Althea Grey Potter (formerly of Oui! Wine Bar) still flourishes here in the new brick-and-mortar digs, bringing the same maximalist flair that earned her early acclaim. Here, it’s filtered through a French-bistro lens honed after charting a life path running from France to Portland. Think delights like savory mille-feuille layered with chicken liver mousse, crispy-skinned duck confit with rye spaetzle and over root vegetables,, and lightly seared Oregon albacore with flageolet bean–olive salad. With its farm-led pantry, vivid flavors, and neighborhood intimacy, Bar Nouveau feels like Potter’s technicolor ode to hospitality—both exuberant and grounded in place. We hope you can join us!

Chef/Owner
Chef Althea Grey Potter has been a food enthusiast since she was very young. Raised in rural New England and a graduate from the Oregon Culinary Institute, she spent many years cooking in some of Portland’s best restaurants and catering kitchens, including Oui! Wine Bar. After appearing on both Food Network’s Chopped and Guy’s Grocery Games, she was named Eater Portland’s 2019 "Food Personality of the Year". Bar Nouveau, her first brick and mortar restaurant, opened in the fall of 2025.

- Do guests need to be of a certain age to attend this event?
- Yes. All attendees must be 21+ to gain entry.
- Does this restaurant allow BYOB?
- No. This restaurant is a non-BYO establishment. Outside alcohol will not be permitted at this event.
- Will this event be handicap acccessible?

- What is the event ticket cancellation/refund policy?
- Restaurants purchase the food for our events 14 days before the event date, at which point we are on the hook for the cost of your ticket. As such, we are not able to offer refunds (or credits towards future events) for any cancellation requests submitted within 14 days of the event date. We will, however, issue full refunds for all cancellation requests submitted at least 14 days before the event date. All cancellation requests must be submitted via email to support@tastingcollective.com.
- What dietary restrictions/food allergies can be accommodated at this event?
- Due to the large-format nature of our events, restaurants are not able to accommodate all dietary restrictions/food allergies or make any menu adjustments based on food preferences (e.g distaste for specific ingredients/flavor profiles). This restaurant will be offering substitutions exclusively for the following restrictions/allergies: Vegetarian, Pescatarian, Gluten, Shellfish, Fish, Egg, Tree Nut. They are NOT accommodating restrictions related to the following ingredients: Dairy, Alliums.
