Baby's Kusina
Day 2: 5-Course Honoring Filipino Heritage Tasting Series
Opened just this past April, this Brewerytown eatery jumped right onto Philadelphia Magazine’s “Best Filipino in Philly” List and Eater’s “Most Anticipated Openings in the US” List. (Yes, you read that right.) Baby’s Kusina and Market, which grew out of a pop-up called Tita Emmie’s, is owned by husband and wife Tam Dang and Raquel Villanueva Dang, first-generation Americans whose families come from Vietnam and The Philippines, respectively. Head Chef Edgar Perez is delighting diners with dishes like Crab + Shrimp Lumpiang Shanghai (crispy spring rolls filled with carrots, shitake, garlic, and shallots), chicken pancit canton + bihon (roasted chicken with egg and rice noodles and stir-fried vegetables), and sizzling sisig (pork belly with bird’s-eye chili, garlic, onions, fried egg, jasmine rice, and pickled melon vinegar). We’re crazy about Filipino cuisine, which brings together Chinese, Spanish, American, and indigenous Filipino influences, and so naturally we are excited to experience its execution at such a high level. See you there!
