Opened at the end of 2023, this Ballard eatery has appeared on Thrillist’s list of “16 Food Experiences That Define Seattle” (2024) and Eater’s 2025 list of “Best Seafood in Seattle.” Chef/Owner Josh Delgado has had an interesting journey, starting his cooking career in Southern Arizona at 16, then working in the summers for the Forest Service, providing meals for forest fire fight crews. In 2007, he landed in Seattle, where he served as Chef de Cuisine at the Barking Frog, as Executive Chef at Alderbrook on the Hood Canal, and finally opened his own restaurant, Le Coin, in Upper Fremont in 2018. At The Garrison, he focuses on tidal and coastal cuisine, with sustainably sourced meats, seafood, and shellfish, as well as farm fresh vegetables. From crispy wild prawns to cioppino to seared sablefish, plenty of oysters, wagyu steak for landlubbers, and maybe finishing up with some black pepper cream, there is something here for all tastes.
