The cuisine of the Republic of Georgia is the result of the broad interplay of influences and ideas carried along the Silk Road trade route, weaving together aspects of Eastern European and Middle Eastern culinary traditions. When Chef Maia Acquaviva, a Georgian native and a successful plastic surgeon in her home country, moved to New York in 2007, she began to take culinary courses. Her passion for great food blossomed and she became the Executive Chef at Russian restaurant Mari Vanna in Manhattan. The next step of her journey took place when she opened Oda House in the East Village in 2013. Here she offers what she calls “grandmother cooking” of the highest order, turning diners on to "Flavors Manhattan Has Scarcely Tasted,” according to the NY Times in their glowing Critics' Pick review of the restaurant.
