A genuine old-timer on the volatile restaurant scene (it opened in 2015), this Indian eatery located in the historic Interurban building in Seattle’s Pioneer Square hardly rests on its laurels. In fact, it continues to gather accolades, as a perennial Eater’s “Essential 38” member and a player on Infatuation’s 2025 List of “Best Indian in Seattle.” Chef Sunit Sharma is the Corporate Executive Chef for Nirmal’s and is carrying out Nirmal’s foundational credo of “Indian cuisine, Re-imagined” with aplomb. Think dishes like lamb sheekh hussaini (chargrilled minced lamb), bharwan simla mirch (bell pepper stuffed with stir-fried vegetables, paneer, and tomato sauce), and saoji chicken rassa (chicken curry with chargrilled onion, coconut, chili, cardamom, nutmeg, and star anise), as well as fabulous biryanis and tandoori chicken.
