Stories like this confirm the American dream. El Topo started life in 2015 as a food truck. Not long after that, Eater named it to its list of “12 Must-Try Houston Food Trucks.” By December of 2019, El Topo had settled into in its bricks-and-mortar location in West University, with a sophisticated menu featuring tacos on house-made, heirloom corn tortillas, responsibly-sourced meats and produce prepared with practiced technique, both ancient and cutting edge, and delicate pastries baked from scratch. Chef Tony Luhrman, a San Antonio native, has enjoyed much success, earning a Golden Cleaver Award at the 2018 Butcher’s Ball and a top 50 listing on Culture Map’s Top 100 restaurants of Houston for 2019. “Not your everyday taqueria,” raves Texas Monthly, adding that “This was the Walt Whitman of little neighborhood restaurants—it contained multitudes.”
