Cassava, a starchy root that is a staple of Filipino cooking, is the namesake of this restaurant that pays tribute to the chef’s roots. Chef Kristoffer Toliao was born in San Francisco, but, when he was two, he and his mother moved to The Philippines, where he lived until he was ten. Back in the U.S., he went to Le Cordon Bleu in Pasadena and then enjoyed a long and fruitful apprenticeship working with Chef Dominique Crenn, renowned proprietor of San Francisco’s two Michelin-starred Atelier Crenn and winner of the James Beard Award for Best Chef: West. Chef Toliao also trained at the two-Michelin starred kaiseki restaurant Kikunoi in Tokyo. In 2012, he opened Cassava on quaint Balboa Street in Outer Richmond. Here, he turns out original and flavorful modern American cooking with Asian influences, creating what SF Eater calls, “A destination worthy of traversing the city.”
