Nearly two years ago, Chef Mat Schuster and his life partner, Paco Cifuentes, opened their bistro Canela on Market Street in Castro. Step inside and you’re whisked away to some corner of southern Spain's Andalucia region, with a Moorish decor and vintage flamenco videos projected on the walls. But, the ambiance just scratches the surface of what makes Canela so special. Chef Schuster is not a Spanish native; he grew up in Texas. But, his partner, Paco, is from Spain, and Chef Schuster's love for the country's cuisine blossomed when Paco's mom, Pepi, taught him how to make paella in Madrid. He then went on to cook at several of Spain's top Michelin-starred restaurants where he refined his Spanish culinary expertise. The result is an eatery that USA Today describes as a “hybrid not felt or seen in many San Francisco restaurants: urban chic on the outside but brimming over with home-cooking wisdom on the inside.”
