The heart of BRUTØ, which opened in October 2019 in the downtown Dairy Block, is undoubtedly its hearth, with its live fire sustained by oak wood and manned by the staff from open to close each and every day. BRUTØ gives diners the rare opportunity to witness each and every step of the culinary process up close and personal, with interaction strongly encouraged. Chef Michael de Leon, a first-generation Mexican-American who previously was sous chef at the acclaimed Old Major, offers a multi-course, omakase (Japanese for ‘up to the chef’) tasting menu inspired by Latin and global cuisines.
