Opened in 2014, this Boulder institution was awarded the coveted Michelin Green Star Award for Sustainable Gastronomy in 2023 and 2024, appeared on Vogue’s “Where to Eat in Boulder” List and Eater’s “38 Essentials” List,” and its chef, Hosea Rosenberg, is both a Top Chef Season 5 Winner and a 2025 James Beard Semi-Finalist for “Best Chef: Mountain.” So, it's safe to say that they've made a name for themselves! Whole-animal butchery and charcuterie are a focus of Blackbelly’s menu, with Chef Rosenberg working closely with local farmers and ranchers. Provided with the best fruits of their labor, Blackbelly’s menu features such signature dishes as crispy pigs ears with red pepper jelly and sunny side egg, scallop crudo with tomato peach consommé, and grilled confit mushrooms. Leave room too for their luscious desserts like tropical s’mores with banana mousse and passion fruit marshmallow and carrot cake with cream cheese mousse, orange caramel, and fried walnuts. “A pleasure,” is how 5280 describes Blackbelly, while Westword hails it as “ another Boulder gem dedicated to doing food the old-fashioned way".
