Opened just this past August, 2025, in St. Johns, Bar Nouveau started life as a pop-up before converting to a brick-and-mortar (and swiftly landing on Portland Monthly’s “Most Anticipated Restaurants” List for it). Chef/Owner Althea Grey Potter (formerly of Oui! Wine Bar) still flourishes here in the new brick-and-mortar digs, bringing the same maximalist flair that earned her early acclaim. Here, it’s filtered through a French-bistro lens honed after charting a life path running from France to Portland. Think delights like savory mille-feuille layered with chicken liver mousse, crispy-skinned duck confit with rye spaetzle and over root vegetables,, and lightly seared Oregon albacore with flageolet bean–olive salad. With its farm-led pantry, vivid flavors, and neighborhood intimacy, Bar Nouveau feels like Potter’s technicolor ode to hospitality—both exuberant and grounded in place.
