Day 2: 5-Course Farm-To-Fork Tasting Series

In 2022, two years into its conception, Three Sacks Full was named to Eater’s List of “Hottest Pop-Ups in Seattle.” Now, this dedicated exponent of vegetable-centric cuisine with a strong emphasis on locally sourced ingredients has moved into a permanent home in the Roosevelt neighborhood—and it has landed on Infatuation’s List of “Openings to Know About.” Chef/Owner Michael Tsai, who spent six years at Oakland’s highly-regarded Camino before moving to Seattle, is offering up a menu that includes starters like potato flatbread with cheddar and pickled peppers and soft-boiled eggs with anchovies and Basque chilies to inventive main dishes like grilled turnips with celery root remoulade, preserved Meyer lemon and grilled medjool dates, golden beet salad and marinated leeks with smoked lentil puree and popped mustard seeds, and animal protein entrees like black cod with roasted tomato broth and herb oil and slow-cooked beef shoulder with brown butter kabocha mash, pickled serrano peppers, and toasted hazelnuts. We’re eager to visit here and to hear from Chef Tsai about how he approaches veggie-forward cuisine!

Best known for the six years he spent at Oakland’s well-regarded Camino, Chef Michael Tsai moved to Seattle shortly before beginning a pop-up series with his partner (and sommelier) Matthew Curtis. Dubbed Three Sacks Full, he recently turned the concept into a brick-and-mortar restaurant.

  2. Roasted Beet & Leeks

    red lentil hummus, popped mustard seed, fresh horseradish

  3. Late Winter Bagna Cauda

    mixed vegetables, anchovy, caper, first-of-the-season wild nettles

  4. Braised Beef Shoulder

    smoky bean ragoût, roasted chicory, grilled flatbread, yogurt sauce, chili oil, herb vinaigrette

  5. Black Barley Honey Cake

    prunes soaked in homemade walnut liquor, whipped cream

Do I have to bring printed tickets to the event?
No tickets are needed.

The ticket price covers the full cost of the meal.
Do guests need to be of a certain age to attend this event?
Yes. All attendees must be 21+ to gain entry.
Does this restaurant allow BYOB?
No. This restaurant is a non-BYO establishment. Outside alcohol will not be permitted at this event.
What is the event ticket cancellation/refund policy?
Tickets to our events are non-refundable. However, for emergency requests, we may allow members to transfer their tickets to friends, provided the guest ticket surcharge of $25 is paid when transferring a member ticket to a non-member. All ticket transfer requests (as well as the guest ticket surcharge) must be sent to us prior to the event. Any guests who have not paid the guest ticket surcharge will not be allowed entry.
What must I bring to the event?

Can I bring guests/non-members to this event?
Yep! For this event, guest tickets are $90 + tax & tip, and you can bring up to 3 guests. Please note, guests are not allowed to attend unaccompanied by a member.
